I finally got to eat some pancakes yesterday–Oat Bran Danish Pancakes to be exact! I changed a few ingredients from my original recipe: I added 1 T ground flaxseed, used 1/4 cup whipped cottage cheese, and left out the baking soda (actually, I forgot to add it but it didn’t make a difference in the end).
The last time I made these, they were super U-G-L-Y so I wanted to make them extra perty this time around.

The batter is very thick because it’s essentially like cooking a bowl of oat bran. The batter doesn’t ‘pour,’ so it can be difficult to form a pancake shape. The trick is to put a dollop (or 3) of batter on the pan while it’s COLD and flatten it down. Then turn on the heat. Don’t flip until the pancake slides around.

Topped with yogurt, apricots, shredded coconut and a drizzle of maple syrup.



I also had a shot of wheatgrass with orange juice to get me revved up.

I had an interview yesterday so I snuck in a quick workout first thing in the morning. I ran 1.3 miles outside and then ellipticalled for 15 min. I had worked out the night before so this was mostly to clear my head and sweat a little.
Post-interview I went to the mall nearby where I got some tart frozen yogurt. I didn’t bring my camera with me, but it looked identical to this one!

I got a little lazy with the photos yesterday because my eats were a bit random. I did have a big bowl of Puffins with almond milk and I must say they tasted much better that way.
I also made my favorite trio of protein: egg whites, veggie sausage, whipped cottage cheese and avocado on a slice of whole wheat bread with a dollop of ketchup for dipping.

This combination is c-c-c-crazy good. A must try!


Now for some bad news.
I think I’m allergic to dairy….again. (Can you hear me crying?)
Recently, I’ve noticed that my stomach starts churning after I eat dairy. It makes me a bit bloated and uncomfortable. I’m guessing I’m mildly lactose intolerant. When I was 12, I became moderately lactose intolerant for about 2 years and then it went away….and now it seems to have returned. Some dairy foods are worse than others. 2% Greek yogurt, ice cream, and cheese are the worst offenders. Perhaps it’s the fat too?
As you can see I’m still eating dairy. I’m trying to moderate it a little bit (keyword: trying) but unless it gets really serious, I don’t think I will cut it out of my diet completely. This is because I get a large amount of protein and calcium from dairy foods, not to mention I love them to death. I am THE Dairy Queen after all. I might try cutting it out for a week or two (okay, maybe just a week) to see if it makes a huge difference in the way I feel. Perhaps I’ll give it a go after I finish off the cottage cheese, yogurt, and kefir in the fridge. I may also try eating goat milk products because I’ve heard they are easier on the tum tum. Considering my love for goat cheese, I don’t think that would be difficult for me.
I have so many random food (and non-food) allergies. I should be crowned the Allergy Queen!

but there are many vegan cheeses at whole foods and so many dairy alternatives available its bananas! (been watching too much rachel zoe today lol) good luck on getting the job you went to get interviewed for!

I also have a coworker whose allergic to all nuts, and apples,plums,peaches etc.. crazy!
Hey Allie, so sorry about the lactose bit. I know a lot of people who have no issues with goat products, as you mentioned. Try those! I think they even make goat’s milk yogurt now…
I’m mildly allergic to eggs; I get really dizzy and can pass out if I eat them, but no throat swelling or hives. Weird, huh? It’s a shame because they’re so healthy and it makes brunches difficult, but at least the trace amounts in baked goods don’t give me problems. Thank goodness!
Have you tried any medicines for lactose intolerance or something like Zantac? My sister is lactose intolerant and that has actually worked for her when she was feeling at her worst with dairy. Not being able to eat dairy is a miserable thing!!!
I don’t know what I would do if I were lactose intolerant…maybe it’s just a fluke?
I have a sensitivity to corn…I don’t want to call it an allergy because I don’t need an epipen or anything…it just makes my stomach hate me! Corn’s in a LOT of stuff but actually a lot easier to avoid than I originally anticipated. PS that sandwich looks awesome – I’ll have to try that sometime!

I actually don’t know if I am allergic to dairy, but I eat that way. My husband is allergic and to make it easier on the both of us, I stay away from dairy as well. Now, when I eat some dairy, I get super bloated. I don’t know if it is because I don’t eat it every day, or if I really am having some reaction to it.
I sure do miss yogurt (and ice cream) quite a bit.
Man, being lactose intolerant just sucks…majorly. I became L.I. 8-9 years ago and it just gets worse every year. These days, I cannot eat most things that contain dairy. My life is majorly sad. My biggest lost was the yogurt. I use to eat a ton of that stuff. Also Italian meals are a struggle for me. I just avoid eating that cuisine all together. I hope your symptoms go away. It may be an intolerance simply because it is a staple in your diet. When you had issues before did you stop eating it entirely? I hope you feel better xox!
My sister and I decided to try a dairy free diet during the month of August. We think we are mildly lactose intolerant so this is a kind of test to see how we feel after the month.
It is going to be SO hard for me because I LOVE chesse and ice cream!!!
That stinks! I recently found out that I am allergic to cow dairy, gaur gum and black pepper to name a few. Luckily they only give me a tummy ache and really bad heartburn. It is hard cutting them out, but easy in the end when I feel so much better. I just made goat milk ice cream the other day, delicious!
Meats make me bloated and the same happens when I eat too much dairy… I try to limit it to once every couple of days or so. I’m also allergic to excess of zinc. Really bad reaction to that! Yikes.
Greek yogurt is delicious and I know you like it.

I share your allergy woes! Until age 9, I was allergic to ALL dairy – not even lactose intolerant, straight up allergic! My parents would give me pizza crust like I was a little puppy! Luckily, I grew out of it. But I STILL have a serious allergy, one I’ve had since I was a baby – I’m allergic to ALL tree nuts AND peanuts (P.S. If you have any good close-to-the-real-thing nut-free pesto recipes, let me know!). And I just know that if I didn’t have this allergy, I’d LOVE almonds. And peanut butter! Luckily, I.M. Healthy’s soy nut butter is a new staple in my diet
But it’s definitely hard living with this allergy – I have to be extra careful when I go out to eat or when I eat desserts, because nuts can sneak up in almost anything. Best of luck with your allergies! I feel your pain, girl!
Aww. Dairy sometimes messes with my stomach but if I keep it at lower fat contents I’m usually good.

I’m allergic to fragrance.. weird huh? I can smell fragrance I just can’t have it on me. I’m also gluten intolerant
I’m also lactose intolerant. My worst offender is cream, especially if it’s tucked into soup, for some reason. Yogurt is a hit or miss… even if I don’t get blatant symptoms, my stomach will feel weighed down for at least a day.
Sometimes, I can eat cheese without reprocussions, but basically, when my stomach doesn’t like it, I get so bloated that others can HEAR it (not to mention I suddenly look pregnant). Sometimes, I swear that the time between eatage and stomachache is sometimes a mere 5-15 minutes.
Haven’t been this way all my life… mostly came up when I was 19-20 when I kept getting stomachaches after dinner (and I was drinking milk at dinner). Sad, too, because MY FAVORITE FOOD USED TO BE CHEESE. I guess it still is… I really love lasagna and pizza. And the vegan type = not the same.
Oh well, maybe if I want to be a sick, farty old lady, I can eat these foods again. I already tried Lactaid pills to no avail…
Until about a year ago, I thought I was not allergic to anything and then all of a sudden I had a whole list of allergies! I was told by my doctor that I was allergic to dairy and gluten. I have never been a pasta or bread lover, but I did eat sandwiches on a regular basis. I do however love ice cream and I enjoyed brie and saint andre cheese.
I have been fortunate and I have found great allergen free substitutions (though I have not yet found a replacement for brie cheese). My favorite ice cream is Luna & Larry’s Coconut Bliss (I can say confidently that it is better than real ice cream). Also it is fun trying all of the different types of milk out there – soy, almond, coconut, hazelnut, rice, and soo much more! I have always been adventurous when it comes to trying new foods, but now I am forced to be even more adventurous.
In the past few months I have really began to feel comfortable with my food allergies and I think that is because restaurants, grocery stores, and the public are becoming more and more familiar with food allergies.

What you just described is almost the identical situation that I experienced!
Except I started to notice my stomach problems during high school and I wanted to figure out what was going on before I went off to college because I would have roommates that would not enjoy my stomach issues.
You probably are not lactose intolerant!
I thought I was lactose intolerant for many years also, but Lactaid pills never helped me either. My doctor said Lactaid pills work for people who are lactose intolerant. They do not work for people who are allergic to dairy. I never even thought about food allergies. You should talk to your doctor or see a gastroenterologist like I did.
I feel so much better now knowing what makes me feel so gross because I am able to prevent it. My stomach feels and even looks normal to me now. While I was eating dairy and gluten my body was so weird feeling. I did not look unhealthy, but I felt off. I now know that I was not getting the nutrition I needed because of my food allergies.

I’ve never been tested or diagnosed, but I know dairy doesn’t agree with me in big amounts… we switched to almond and coconut milk a long time ago (we use it for cereal, mainly anyway!) and while I say I am a Vegan Except For Cheese, I do eat cheese in small amounts.

Oh no! Allergies are bad!!! But soy products are oh so good! You should really try soy milk! It’s probably the best stuff on earth. Also, almond milk, but I think you’re allergic to almonds, no?

Sorry to hear that! It’s strange your stomach still gets upset after eating yogurt since lactose intolarancy usually doesnt flare up after yogurt (something about how it’s cultured..or the bacteria in it?)
I was DEATHLY lactose intolerant as a baby. Then it went away, came back, went away, ect… LOL I just deal with it. Cheese is one of my favorite foods, so I just try to limit it and cut it out when I can by using non dairy milks and stuff.
ohmygoodness I haven’t had oat bran in soooo long. The only thing I find my self allergic to is Oregon Chai tea. Everytime I drink it my throat closes up!! !

Have you ever been tested for a lactose allergy? Many times, people assume they are lactose-intolerant but what they really are allergic to is the milk sugar and not the actual milk protein. This is what I notice about myself. I can tolerate dairy that has less lactose but more of the milk protein like some cheese, yogurt and cottage cheese. But cows milk, mozzarella, ricotta, and ice cream I can not do because of the milk sugar. It sounds like you may be having too much of the milk sugar. I would suggest cutting back on fro-yo and see if that does the trick. I know it’s the most difficult thing in the world (because I LOVE fro-yo too) but it really may help and than you would know if it’s the milk sugar or the milk protein.
I’m intolerant to gluten, casein (dairy), and soy. I’m allergic to eggs, cranberries, haddock, snapper, pinto beans, kidney beans, mushrooms, brewer’s yeast, baker’s yeast, and mustard.
I’m a recovering dairy addict. And, I must say, though I miss my froyo TERRIBLY, life without dairy is perfectly doable! There are tons of alternative options these days. Try Coconut Bliss or Agave Nectars Gelato if you haven’t already! And, Daiya cheese is great for people that can eat yeast. If you can’t have yeast, try Dr. Cow’s cheese.
Also, if it is a lactose intolerance, it should be manageable with a Lactaid tablet. Those provide the enzyme that is necessary to properly digest lactose. If they don’t work for you, it could mean a casein intolerance, which is more serious and doesn’t go away with time.

I’m allergic to all nuts except almonds. And I just discovered last summer that I’m also allergic to oysters, clams, mussels, and uhh one more thing that I can’t remember haha. I don’t really mind about those allergies though – as long as I can still eat salmon and shrimp, I’m happy.

fermented dairy works really well with me, but enzymes in particular made a world of difference. i used to handle NO dairy, and since taking enzymes for a good month or so i can pretty much have any dairy with not much issue, but fermented works better since it has a lot of the lactase enzyme in it naturally. definitely see what works best for you <3

I heard giving up dairy makes a big difference in the way you feel, intolerant or not. I’m thinking about giving it up too to see if I feel a difference! (I read this in The Kind Diet book by Alicia Silverstone and I’m sure any vegan will tell you the same thing.)

Daaaaaaaaaang. I feel sorry for you because I know how much you love dairy! I’m luckily not allergic to anything, but I was getting really sweaty this morning (on my first run! Outside!) and I noticed that the outer sides of my thighs were getting really itchy. I ended up with angry red scratch marks on my legs. This only happens when I’m running, and I have a friend who’s apparently allergic to her own sweat. I wonder…

My lactose problems wax and wane – I find cheese, cream and milk are the worst! Cottage cheese and yogurt seem okay, though. I have to try that protein snack – it looks so yummy!
Man, lactose intolerance is the worst! I thought I was LI at the beginning of the year. My doctor said she thought so too and to try lactaid (you should try it? maybe…), but unfortunately that did not help me AT ALL. It just made me feel worse. The doc concluded that I am not LI, I am just weird (my wording not hers of course, haha!). Things that make me sick include cream (most ice creams too
), beef, pork, duck, anything cheese-based, and anything that is extremely greasy. Basically: fatty stuff. But enough about that.
I found your blog recently and I am in LOVE. Seriously, I wish I could eat everything you eat. I think I have spent hours over the past two days just looking over your archives and drooling (and snacking on some accidental granola that I made [granola bars that didn't stick]). Unfortunately I am about to move to a new town for grad school and, steady yourself!, the nearest whole foods/central market/costco is over 2 hours away!!! And, sadly, I live in Texas so the nearest trader joe’s is in Tennessee. At least I am finally getting a blender!! And I will be living in an Ag town so…so maybe there will be great produce? I doubt it, probably just great fresh beef…that I can’t eat. Haha. Oh well, it’ll be an adventure.
And again, I am so sad for your dairy woes! Dairy (well the fat-free or low-fat kinds) and me are bffs. Cottage cheese & yogurt, mmm. I am dying to try this kefir! And various new nut butters! Allie you make me insatiable!!!

I used to be mildly lactose intolerant too when I was 10-15 yrs old but these days I have no symptoms, but I also don’t drink milk which was the main problem back then too.
I haven’t found in 22 years anything that I’m allergic to (food wise) – thank GOD! So sorry about the tummy troubles! I know there’s a lactase pill you can take before eating dairy to ward off the churning – have you tried it? I could never give up Greek yogurt!
I totally feel your pain!!! The husband and I are lactose intolerant too! I think I always have been but didn’t really realize the cause of my stomach aches until maybe 6 years ago. I gave up yogurt, ice cream and cow’s milk for awhile, but I started eating Silk Soy yogurt and soy milk a few years ago. The soy yogurt is nowhere near as good as the real thing but after awhile, I got used to it. I have faith that you fill figure out what your body can handle!!!
Oh Allie, I am so sorry! I am allergic to dairy and soy. I started out thinking I was lactose intolerant, but I can’t have any dairy even with the lactase pills. The positive side is that there are great alternatives out there! Your eats look delicious!

Statistics show that 70-90% of Asians are lactose intolerant. I sadly fall into this group. The genetic predisposition may be due to the lack of dairy/cows in the Asian cultures.

I am allergic to foam…. specifically, styrofoam! The stuff is nasty so I try to avoid it anyways. As for other things… bee stings.

After suffering with stomach issues for..AGES I finally went to a naturopath, and it turns out I have a DAIRY and REFINED SUGAR intolerance.
Makes life a bit difficult.
i’ve always wondered.. how do you cook your eggwhites like that? They look like they are round and fit on the bread so well. Do you use a special pan?
I microwave them in a small bowl (sprayed with olive oil first!). 1-1.5 min. does the trick. Egg whites from a carton don’t pop as much as egg whites from fresh eggs.
Hi, Allie! Did you know that a ridiculously high percentage of (East) Asians are lactose intolerant?? I am Asian, and my whole family is basically lactose intolerant (of varying degrees). I’ve found that completely cutting out dairy is BAD…to the point where I will literally dream about eating cheese. Sometimes I will use Lactaid if I know it is a dairy product that will yield adverse effects, and it helps some. Like yourself, yogurt is hit or miss for me, but I’ve found that the more strains of probiotics in the yogurt (i.e., more than just L. acidophilus), the easier it is on my stomach. I think it’s on and off for me (by years not days). I am very allergic to Lactaid and yogurt with a lot of strains is pretty hard on my stomach too. Why is cutting it out bad? Will it make it worse?
