Yesterday was a long moving day. My dad and I moved furniture around for about 3 hours after the movers left. Then we head back to the old house to eat dinner (with no dining table!), pack up 2 cars FULL of stuff and drive back to the new house. We continued to unpack for another few hours and then finally reassembled my bed. We didn’t call it quits until close to 1 AM. Oh yes, I slept like a rock.
All I have to say is thank goodness it was 75 degrees and not 95 degrees! Although it was raining on and off all day, I’d say we got incredibly lucky with the weather.
This morning it was back to unpacking, washing blankets from school (oh. my. gosh. don’t. ask. how. that happened.), climbing stairs and vacuuming bugs.
Allow me to explain.

The difficulty with transitioning from condo living to house living is getting used to the stairs again! In the condo, I occasionally ran up the multiple flights of stairs to our unit but for the most part, I used the elevator. My legs have become accustomed to non-stair living the past few months!

Another thing? Bugs!! We used to live with the forest in our backyard (before the condo) and seeing bugs in the house was normal. However, bugs don’t really venture into condos. Now that we’re back in a house again, I’ve been seeing bugs e-v-e-r-y-w-h-e-r-e! I was greeted by this cutie today while unpacking.

As promised, the crepe from yesterday.

In the midst of all the moving chaos yesterday I managed to make something delightful for my post-workout brunch. It took me a whopping 3 min. to throw together.
The idea first started with pumpkin Greek yogurt. I usually make this spiked with cinnamon and stevia.

However, we didn’t have a can opener in the house. Ohhh crepe!
Then I remembered the frostbitten pumpkin I had in the freezer. I defrosted it in the microwave for a few minutes and it was almost as good as new (just a bit wet!). I’m glad I didn’t throw it out.
Although, lets be honest. Me throw food away? Over my dead body!

I spotted my leftover crepe batter in the fridge and immediately came up with Pumpkin Crepes! I added 2 TBSP of pumpkin puree and 1/4 cup egg whites to 1/2 cup of the sweet crepe batter.

I added egg whites to 1) make it more eggy, 2)boost the protein content and 3) finish off the carton in the fridge.

The crepe filling consisted of pumpkin Greek yogurt and banana slices.

Sadly, I had one too many handfuls of pecans last week so I did not have any to sprinkle on top of my pumpkin crepe. It would have been the perfect addition. How unfortunate!!

I think I ought to make this again with pecans and perhaps some coconut too. That would be sweet! Pun [totally] intended.

The food has been rather plain and boring because of the move. However, if I advance to the next round of Project Food Blog, I’ll be cooking up a delicious feast! I already have an idea of what I want the dinner party menu to look like.

I’ve stuffed canned pumpkin inside a crepe before… kinda mixed it with vegan cream cheese and spices first… it was pretty good!

And I feel ya on the moving. I hate it! I think you’ve got me beat on number of moves, though! I think the worst part about moving is cleaning your house after you’ve moved out- you’re already tired, and there’s nothing to eat/ sit on when you get worn out by the cleaning!

Your willingness to eat expired food is remarkable.
I typically don’t pay much attention to expiration dates as long as it looks okay, but I did find an entire carton of eggs in my fridge that expired at the first of the week. I somehow doubt I’ll be able to down a dozen eggs before they’re bad.

I like the way you think! Pumpkin and crêpes are two of the most amazing things I can think of and I don’t know why I haven’t thought to combine them yet! Maybe I can tell some of the Frenchies over here in France that they should add your creation to their menus…?
