Our last and final complimentary meal at the all-inclusive resort was a memorable one. We chose to dine at Leonardo, an Italian Restaurant, because the menu looked rather exciting! We cherished every last bite and drop of our delicious meal. We loved that each course was small in size and not too heavy (since we weren’t really hungry after 2 buffet meals!).

We don’t go out to eat very often when we’re at home so this week has been a real treat for us. My next post will be about the non-resort meals we had in our kitchen and on the side of the street

The ‘rents started with red wine (the same French wine from the Mexican Restaurant). I ordered a Mojito.


The bread was warm, buttery, and ever so cushy.

I chose the Salmon Tartare for my Primi Piatti. Fresh salmon topped with beetroot foam wrapped in cucumber.

My dad got the Tuna Carpaccio.

My mom got Grilled Pears with Cheese (panela cheese?)

For my salad I got the Capresse: Grilled tomato with mozzarella cheese, accompanied with a basil vinaigrette.

I shared the Veggie Fusilli with my mom.
Despite the small portions, I was getting really full at this point already! I guess the guacamole and chips right before dinner wasn’t such a great idea.

We were only halfway through so I had to make room for more!
My main entree was the Vegetable Musaca: Eggplant, zucchini, and spinach, topped with alfredo and Biscayan sauce. Served with a side of beetroot puree.

My mom got the Mozzarella Stuffed Pork Loin

We ended the night with cappuccinos and a trio of desserts.

Cheesecake, Tiramisu + Flan

Every dish was exquisite. We were officially stuffed to the brim.

After dinner, we enjoyed the Dance, Drums & Fire show by the pool.

Instead of taking the bus back to our resort, we walked the 2 miles to help with digestion. Best. idea. ever.

Cancun looks like sooo much fun – I went to an all inclusive resort with my friends from college last spring in the Dominican Republic and it was so fun and somewhat similar (though your food and drinks look way better)! We also didn’t get to swim with dolphins
What an exquisite dinner!!! First, multiple course menus are always a fantastic experience. It’s like it never ends. And I wish this vacay was never ending for you. What an incredible get away!

My most memorable vacations have been skiing with the BF, and to Italy with my parents in high school. Both amazing for different reasons…though the Italy one definitely had better food!!

What do you think about this? I feel like every time I order pasta its ALL pasta (the noodle part) and very little sauce and veggies or whatever topping said pasta comes with… When I make it at home I much prefer a very small amount of pasta in relation to everything else. Your other courses looked sooooooo good!! Who would have thought – Italian food at a Mexican resort?!

My most memorable vacation was to Hawaii four years ago. I went for an international swim meet, but my family came too, so it was a great combination.
I’m finally starting to go on vacations (just got back from San Antonio) after years of working full-time. I’ve never been on a family vacation, though… it must be nice!
Such a great title! My most memorable vacation was basically my entire semester abroad in the spring. Then of course there are the ones with family, like when we went to Williamsburg, Virginia but ended up spending the entire week at Busch Gardens… haha

I had a wonderful time in Mexico, too: Tulum, Cozumel, Playa Del Carmen, Cancun, Chicken Itza and everywhere in between, it was spectacular. Definitely my most memorable vacation!
