It got a bit messy over here today…

For my return to bread baking, I went with the Whole Wheat Apple Walnut Bread that I’ve made a few times now. This loaf was the one I improvised awhile back. See the old envelope with measurements written out? I thought the recipe was ready to publish but after making it again today, I think it still needs some tweaking.
I hadn’t made a loaf of bread in over a month and boy did I forget a lot of what I learned! I need to brush up on my own bread baking posts before my next loaf.
Like they say, no two loaves are the same. I used the same measurements that I used the last time I made this loaf, but it did NOT turn out the same. The dough came out oddly dry and I was worried it wouldn’t even rise!

5 hours later…
My doubts went out the window. This loaf came out soft and doughy. Success!
(Apparently, this loaf is very very hard to mess up!)

While my bread dough was rising, I walked over to the gym for 55 min. elliptical, 10 min. upper body strength training and a nice streeeeetch sesh. I may not have run very far yesterday but my legs were SORE!
Post workout, I guzzled down a Very Green Strawberry Smoothie.
- 1 cup spinach
- 2 T Very Green Powder
- 4 strawberries
- 1 cup Greek yogurt
- ice, water and stevia

Then I set out to make BBQ Tofu.
I cut up a container of Extra Firm Nasoya Tofu Plus (free w/ a coupon) and doused it in BBQ sauce.

I baked the cubes in the toaster oven for 375* F for ~25 minutes until crispy.

Paired with broccoli and 2 slices of fresh bread.

And then another 2 slices of bread disappeared into thin air/my stomach. This bread is so incredibly filling. I’ve got a bread baby!

That bread looks so, so soft and delicious! i am begging you to send me some bread courage – I’d love to make my own, but after my one and only try that went so terribly wrong…I’m scared

My favorite way to make tofu is definitely in a stir fry but this way looks delicious, too.

I love the plain crispy tofu from Daily Garnish. It has a nice crispy outside and a soft inside, reminds me of a chicken nugget! Your bread looks amazing! I especially love the picture of the whole loaf.

That dinner looks awesome – my favorite way to make tofu is the exact smae way yo udid it – marinated and then popped in the oven!!
Even though I just ate dinner, these pics of the bread and tofu are making me sooo hungry!
I usually marinate my tofu in copious amounts of BBQ sauce, Louisiana-style hot sauce, and a generous sprinkle of cracked pepper. I then pan fry or, if it’s the summer time, BBQ ‘em.
i love when you think something is gonna fail but it turns out to be a success! mmmmmmm i wish i had just out of the oven within my reach right now!

I love tofu pan-fried with olive oil, salt, and pepper. I used to be so scared to use eat tofu, but it really is delicious even with minimal seasoning.

BBQ is definitely my favorite way to eat tofu. Although, I have made a pecan encrusted tofu one time that I think you would LOVE!!!! I’ll have to send you that recipe.

I like to marinate tofu in sesame oil, soy sauce, and maple syrup then bake it.
Everytime you do a bread post, I am inspired to make pizza dough. Still haven’t of course, but maybe soon!
