Peter’s Pineapple Crowns

by Allie on March 29, 2011 · 68 comments

in Breakfast, Dessert, Dinner, Peter's Kitchen

Last night, after dinner @ Peter’s Kitch, the chef himself sliced open a pineapple. “Crown-style,” like many of you noticed last time.

IMG_2027.JPG

I spy with my little eye, a chunk of salmon missing from the plate…

Peter doesn’t slice pineapples that way for looks, he does it to save as much of the pineapple as possible…as much of the sweet part. No food goes to waste, ya know?

How to Cut a Pineapple,  Crown-style

After slicing off the spiky leaves and skin, Peter goes through and makes angled cuts to remove the brown thorn bits (instead of slicing off the entire outer layer of flesh). It doesn’t take long and that way you don’t miss out on the good stuff.

After removing all the thorn bits (clearly, I need to learn the parts of the pineapple), he cuts it in fourths, vertically, and then slices off the core. Of course in our house, we don’t slice off the core completely. A little fiber never hurt ya!

I also baked a small batch of blueberry muffins to use up some nearly bad blueberries. The recipe was a winner but I didn’t get a chance to take any photographs of the process.

I guess I’ll have to buy more blueberries and make them again for a recipe post.

I spy with my little eye, a muffin chunk missing from the pan…yet again

New plate + new placemat. Pretty, huh?

This morning, I had to wake up early to take my parents to the Megabus station in DC. They’re going to Greece! Greece and Spain are the two countries I want to visit the most in Europe. Jealous. My mom got a great deal on a cruise package last year. Like, a really great deal.

After dropping them off, my Uncle and I are doing what we do best…

Eating lunch and grocery shopping. Huzzah!

1/2 Ezekiel Eng. Muff w/ almond butter and banana + a blueberry muff

IMG_2068.JPG

I’ve said it 80 billion times and I’ll say it again…these Ezekiel Eng. Muffs are the bomb! I would eat a whole one but they’re expensive and I’ve gotta make them last. If I eat 1/2 a muffin at a time…it’s like I have 12 instead of 6.

…and that, my friends, is why we study math in school.

Coffee, as usual.

I’m off!

Tell me: Which fruit do you hate slicing up the most?

Mangoes are pretty annoying. Delicious, but annoying.

I’m the clumsiest person alive. I would totally slice a finger off attempting to cut that pineapple :/

Pineapple is super annoying to cut because I always feel like I throw half of it out by the time I’m done! I need to try the crown way!

Blueberry muffins look delicious!

It’s so funny (and great) that you posted this! I just bought a pineapple the other day, and as I was slicing it, I was thinking to myself, “I wonder if anyone has any tips on how to properly cut a pineapple.” I think I end up throwing half of the good stuff away because of the way I cut it. So thanks for sharing! :) And I LOVE the Ezekial muffins, too. They’re really yummy

That Pineapple makes me want some! This winter in HI, I ate so much, I got sores in my mouth :(

Mangoes are definitely up there with being a pain to slice, but I think the most annoying fruit to eat are seeded grapes!

I’d have to say bananas because I hate bananas most of all (seriously, least favorite food EVER)! Pineapple is one of my favorite fruits but have been too nervous to cut up a whole one!

He’s one talented slicer, for sure.
Mango – I hate slicing mango. When I do, it look like i half-heartdly threw it into a food processor, just to mangle it a bit, but not to chop. It’s really quite embarrassing!

The pineapple crowns are adorable!

Honestly I really only hate slicing tomatoes — the juice and seeds gush out and it just makes a mess!

Oh yeah…tomatoes are so annoying! They look terrible without the juice/seeds but it’s so hard to cut them without them gushing out just like you said.

Those english muffins look so good! I am definitely going to look for those in the store? How much protein do they have?

I dont really hate cutting any fruit, but I absolutely hate pealing oranges!!! Sometimes the skin will come right off, but sometimes it is a very hard task!

I hatehatehate cutting open pomegranates, I always try to go shallow enough that I don’t cut upen the arils and get juie everywhere, but then I can’t rip it open and getting them all out takes forever.

Try the underwater method!! So easy….well relatively easy.

I’ve NEVER cut a pineapple, even though it’s one of my favorites. For some reason I’d rather pay more for pre-cut, than use a huge knife!!

HATE cutting mangoes, but I love them. That darn bony thing in the middle is so annoying.

Ooohh, mangos are really difficult to cut! I remember we had them in my dining hall freshman year (only once–we weren’t that ritzy) and no one knew how to cut them.

Reply

16 Liz March 29, 2011 at 10:58 am

Haha… so… I never core my pineapple, I actually enjoy the tougher core – change of texture! I also may or may not occasionally eat mangoes whole (skin, not pit). Mmmm tropical fruit!

I love the pineapple crowns! I hate having to slice mangos! I used to hate peeling kiwis, but now I just eat the skin :)

I first read your comment while out shopping and thought you said you ate the skin of the MANGO!!! I was like say what?!?! I’m dying to try kiwi with the skin but alas I’m allergic. Surprise, surprise.

Ezekiel english muffins are amazing!! I have never cut a pineapple…so I think that’s the fruit I would probably hate slicing the most! I don’t like peeling oranges so I typically get clementines when they’re in season because they’re soooo easy to peel :)

Would you consider making a video on how to cut the pineapple the “crown” way?

Reply

I actually thought about that while looking through the photos. Maybe with our next pineapple :)

but you see, when you only eat half, you can have something else like the vitamuffin and get two tastes!!
yum :)

I could never do that with a pineapple! LoL I’m lucky if I can get off all of the rind. So cool that your parents are going to Greece!!!

I am obsessed with the Ezekial English muffins (so much better than the bread for some reason) question, though: do you freeze yours? I always buy them frozen so I assume I should do the same but I HATE defrosting ‘em. They get all.. soggy.

anyhoo – those pineapple crowns are perfect :) especially for you, princess ;) <3

Reply

36 Allie March 29, 2011 at 3:59 pm

Yep, I keep them in the freezer. I find that it helps me pace myself too. The way I get them to be not soggy….

First microwave them until they’re not icy but still a little bit frozen (~10-15 sec.). THEN pop them in the toaster!! Works like a charm.

Tee Hee. I prolong my expensive food stash by eating 1/2 as well. Great minds think alike. The love pineapple flavored things, such as the CHobani 2% yogurt, but I think I am allergic to pineapple the fruit. Allergies = no bueno.

I have never tried the Ezekiel brand, but Whole Food’s brand whole wheat english muffins are INCREDIBLE. They are so fluffy and chewy…amazing! The price might be a bit cheaper if you want to try those once instead!

I know it sounds crazy. Strawberries are my least favorite to slice!

When I get a mango, I know it’ll be a commitment before I can dig in. I’ve mastered the dicing method, so it’s not all pulverized like the first times I tried.

Strawberries, though, always take longer to get all cleaned up than I’m willing to surrender. I like to cut out the middles with the tops so everything is all sweet and I can dig in. And I’m always slightly desperate by the time I get to eat them. Hahaha.

Pineapples are real delicious, but I tend to get an itchy throat afterwards. Does that ever happen to you? I’ve learned that soaking it salt water helps tremendously!

That actually happens to me with a lot of other fruits (apples, pears, kiwi, etc.), but fortunately not pineapple.
