Fill Me Up Butter Cup

Last night I made Any-Butter Cups.

Actually, I made sunflower seed butter cups but you could make any butter cups using this method. Well, probably not butter butter cups but peanut butter, almond butter, cashew butter…you get the idea. Any butter.

I bought chocolate sun cups not too long ago and they weren’t cheap (I’m really not sure why since they’re so friggin easy to make!). Last weekend I told my brother I was waiting for chocolate almond butter cups to hit the market.

…and then it hit me. I’m gonna make ‘em myself!

1. Melt Chocolate Chips

2. Fill each mini muffin liner 1/3 of the way with melted choc. and cover the sides

3. Freeze for a couple minutes

4. Then add a dollop of nut/seed butter to each cup

5. Fill ‘em up all the way with chocolate

6. Freeze for a couple minutes and enjoy!

Each and every Halloween growing up, I had to give ALL of my Reese’s Peanut Butter Cups to Peter. He loved it (see? There is a perk to having a child with peanut butter allergies.).

Everyone loved that I couldn’t eat peanut butter cups. Everyone loved these darn cups. Being severely allergic to peanuts, I never understood the what all the hype was about.

Any-Butter Cups

Ingredients

  • 1 cup chocolate chips, melted
  • 3 TBSP seed/nut butter

Directions

In a small bowl, melt chocolate chips in the microwave for 1 minute (you can use a double broiler if you prefer). Fill up mini muffin cups/liners with melted chocolate 1/3 of the way and up the sides. Place cups in freezer for a 3-5 minutes. Next, add 1/2 TBSP of nut/seed butter to each cup. Lastly, fill up the cups all the way with melted chocolate. Place in the freezer again for 3-5 minutes.

Makes 6 mini Any-Butter Cups

I ate an Any-Butter Cup while watching Country Strong with my Ma (I may have inherited a Southern accent for few hours).

I enjoyed the movie. It wasn’t Earth shattering, but it was interesting to follow a [make believe] famous artist going on tour. I’m a big Gwyneth Paltrow fan and I loved watching her, Tim McGraw and Leighton Meester together on the big screen…singing! Oh and don’t forget Garrett Hedlund.

Definitely worth the $1 rental fee! Redbox rocks my world.

Off to devour an Any-Butter Cup…

I see those sun butter cups every time I go to the grocery store…and I lust after them. ;) I make peanut and almond butter cups at home, but sunflower cups are now on my list for sure. Thanks!

I made practically the same thing yesterday! But I made this peanut butter-shortbread crust for the bottom and then poured the chocolate over it. Clearly we were on the same wavelength, lol.

Eee they look so good!! I’d make them with cashew butter…I can just imagine the creaminess….and sea salt Lindt melted. Ohmy!

I need to make these – with soy nut butter. I haven’t had a Peanut butter cup in years since I became allergic to all things not soy nut butter.

Peanut butter + Chocolate = Best thing ever! I’ve learned to add a little bit of butter to the chocolate (Because why not add butter? Lol.) so that the chocolate is a little soft and melts into the nut butter. Amazingness!

Those look so good! I have yet to try SSB though. I usually only stick with peanut butter because my bf is allergic to all other nuts! BOO! Making all these goodies would be dangerous with no one to share them with! :P

I want to see that movie but Jason told me long ago that he has no desire to see it! I’ll probably wait until it is on instant Netflix.

Those butter cups look delicious! I used to give away my PB cups too — in exchange for Snickers (my favorite!).

These look so good Ali! I LOVED Country Strong, by the way…I thought Tim McGraw was kinda weak but the rest was great. I’m sort of obsessed with Gwyneth. :)

I’ve been wanting to make these forever!! I think I have a bag of chocolate in the cupboard? Maybe? If I do, I’ll make them..if not, I’ll buy some so I can make these! I really need to work on keeping my baking ingredients stocked..

Yum! I’ve made my own peanut butter cups before and they taste better than the premade ones. When you make your own you can control the protions and the type of chocolate and nut butter, I love that!

I love Reese’s Cups! I’ve made dark chocolate cups before with different fillings like butterscotch or pb chips, and various nuts, but never nut/seed butter. I don’t know why I never thought of it! These look great!

Haha you totally just summed up my childhood in this post! I swear I always had to give away like half of my Halloween candy to my dad! After giving him my Snickers, Reeses, Oh Henry’s, M&M’s, and Mr Bigs, it seemed like there was hardly anything left for me. :P

If you’re distributing those on Halloween this year, I’m definitely there! Those look so yummy but I think it’s too risky for me to make a batch for myself- it may not survive for more than a day!
