Cool as a Cucumber Salad

Let me state the obvious here. It’s freaking hot outside. Like really really really freaking hot. It’s steamy-sunglasses hot. It’s beady-sweaty-forehead hot. It’s I-can-hardly-breathe-and-my-skin-is-searing hot.

The solution? Grab an ice cold bevvy and make this cucumber salad. Your body will thank you.

This salad is a little tangy, a little sweet, a little salty and best of all…a lotta COOL! It’s refreshing and hydrating, perfect for when it’s 100*F outside.

This salad requires a few simple ingredients. Cucumbers (duh), rice vinegar, sesame oil, salt and sugar. You could use another type of vinegar and another type of oil if you so desire. Like red vinegar and olive oil or apple cider vinegar and canola oil. I recommend rice vinegar and sesame oil for best results.

But please do not cut out the salt and sugar. They are critical for this salad.

First, chop up the cucumbers into bite size chunks.

Then mix together rice vinegar, sesame oil, salt, and sugar to make the dressing. Toss with cucumber chunks and let sit for a few minutes to marinade. Sprinkle sesame seeds on top and serve cool.

Cool as a Cucumber Salad

Ingredients

  • 8 small or 3-4 large cucumbers
  • 1/4 cup rice vinegar
  • 2 tsp sesame oil
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • Sesame seeds (optional)

Directions

Chop cucumbers into bite-size chunks and set aside. In a large bowl, mix together the remaining ingredients for the dressing. Add in cucumbers and toss until fully dressed. Allow to sit for 10-15 min. to marinade. Sprinkle sesame seeds on top and serve cool.

This is so delish! I actually make a salad a lot like this and recommend putting red and orange peppers in there too – they are so sweet and yummy!! It was so sweaty hot here today too! And of course today WOULD be the day that all my shorts are in the laundry… meaning I wore pants. Silly me! :P I wish I’d had this salad to cool me down!
