			<content:encoded><![CDATA[<p></p><p>Remember a couple weeks ago <a href="http://www.livelaugheat.com/2011/03/29/peters-pineapple-crowns/" target="_blank">when I made blueberry muffins on a whim</a> and told you I didn&#8217;t snap photos of the baking process so I couldn&#8217;t write up a post and I would have to get more blueberries before I could make them again and <em>then</em> blog about it?</p>
<p>Remember when you were younger and your teacher told you no one would take you seriously if you wrote run-on sentences?</p>
<p>Well, that&#8217;s still true but you might want to take me seriously just this one time because these muffins are <em>seriously</em> good.</p>

<p>I decided that I didn&#8217;t want to wait for blueberries to go on sale to post this recipe on the blog. I (and you) can&#8217;t wait that long! The baking process is fairly standard so I know you&#8217;ll be just fine.</p>

<p>I made these Blueberry Oat Bran Muffins that night because I wanted to use up some shrinking blueberries that my Uncle bought. I knew I wanted to incorporate oat bran in the recipe because I like the way it gives baked goods a gritty texture (in fact, these muffins tasted a lot like corn muffins!).</p>
<p>I found a great recipe on <a href="http://chocolateandzucchini.com/" target="_blank">Chocolate &amp; Zucchini</a>, but there was one problem&#8230;I didn&#8217;t have any yogurt!</p>
<p>I&#8217;ve been yogurt-free for nearly a month now (because I&#8217;m <a href="http://www.livelaugheat.com/2011/03/15/dumping-dairy/" target="_blank">cutting back on dairy</a>). I would&#8217;ve baked with yogurt if we had some since I&#8217;m convinced whatever it is my body doesn&#8217;t like would be killed in the oven (probably false), but I didn&#8217;t have any so I had to find something else that was dairy free to use as a substitute.</p>
<p>&#8230;man, I&#8217;m really rockin&#8217; the run-on sentences today!</p>

<p>Instead of yogurt, I used a popular buttermilk substitute of milk + vinegar. Instead of regular cow&#8217;s milk, I used almond milk.</p>
<p>I had never used the milk + vinegar substitute before so I was a bit skeptical. I mean, I took one wiff of that apple cider vinegar and I <em>knew</em> the muffins were doomed.</p>
<p>BUT it worked out well&#8230;<em>very</em> well!</p>

<p>Adapted from <a href="http://chocolateandzucchini.com/archives/2009/08/blueberry_oat_bran_muffins.php" target="_blank">Chocolate &amp; Zucchini</a></p>
<p><strong>Ingredients</strong></p>
<ul>
<li>1 cup almond milk</li>
<li>1 TBSP apple cider vinegar</li>
<li>1 cup oat bran</li>
<li>1/2 cup white whole wheat flour</li>
<li>1 tsp baking powder</li>
<li>1/2 tsp baking soda</li>
<li>1/4 tsp salt</li>
<li>1/2 cup sugar</li>
<li>1 cup fresh blueberries</li>
<li>2 TBSP coconut oil, melted</li>
<li>1 tsp vanilla extract</li>
<li>2 large eggs, room temperature</li>
</ul>
<p><strong>Directions</strong></p>
<p>Preheat oven to 350*F. In a cup, mix almond milk and apple cider vinegar together and let sit for a few minutes. In a large bowl, combine the dry ingredients (oat bran, ww flour, baking powder, baking soda, salt, sugar). In a separate medium bowl, whisk together the wet ingredients (almond milk and vinegar, coconut oil, vanilla and eggs). Fold wet ingredients into dry ingredients until just combined. Fold in blueberries. Pour mixture into a lined muffin tin. Bake at 350*F for 15-18 min. or until an inserted toothpick comes out clean.</p>

It was all in good fun (not used in a bullying way!). I mean, let&#8217;s be honest here, just by <em>saying</em> &#8220;dorkus maximus&#8221; you <em>ARE</em> equally as dorky.</p>
<p>The phrase randomly popped into my head while writing up this post. I really let my inner dork shine this morning. In case you thought you were the dorkiest of all, picture me holding floss in one hand, my camera in the other, all while parading around the house looking for a good photography spot.</p>

<p>Guess what? I&#8217;ve flossed every single day this week. That would be more times than I flossed in all of 2010&#8230;and possibly my whole life. It&#8217;s starting to become <strong>a habit</strong> and I&#8217;m almost to the point where I feel weird going to bed without flossing.</p>
<p>I cry at the thought of getting cavities filled, so why set myself up for even more painful procedures down the line? <strong>I take pride in staying healthy and that certainly includes my teeth.</strong></p>

<p>In less than a week, I go from <a href="http://www.livelaugheat.com/2011/01/08/sizzle-sizzle/" target="_blank">tricking my dentist</a> into thinking I flossed to being an advocate for daily flossing.</p>

<p>I may be flossing, but that doesn&#8217;t mean my chocolate consumption has lessened. Last night, while on a yogurt run (did I just say &#8220;yogurt run?&#8221;), I found <strong>Dark Chocolate with a Touch of Sea Salt</strong> on SALE.</p>

<p>(I actually have a box leftover from last winter. <strong>I hoard SCSR tea like it&#8217;s going out of fashion.)</strong></p>

<p>Taylor was adorable. I&#8217;ve <em>only</em> been belting her songs day and night for the past week <img src='http://www.livelaugheat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p>Portia discussed her battle with anorexia and bulimia as well as coming out in the Hollywood spotlight. She had me in tears! What a well-spoken lady. I never knew about her story until today. I want to read her new book now, <em>Unbearable Lightness.</em></p>

<p>I&#8217;ve mentioned that it takes me <a href="http://www.livelaugheat.com/2010/04/19/slow-poke-blogger/">an inordinate amount of time</a> to blog. Part of the reason is that I put a lot of thought into what I write and I proofread my posts at least a dozen times before I press publish. The other part is that my laptop is <strong>incredibly slow</strong> and it can&#8217;t handle a lot of activity at one time. Sometimes, if I drag too many photos into my blog post, I have to restart the computer just to load more. This makes it <em>very</em> difficult for me to blog when I am short on time such as when I am on <a href="http://www.livelaugheat.com/2010/10/14/nyc-part-iii-will-walk-for-food/">FUN</a> <a href="http://www.livelaugheat.com/2010/08/14/chicago-is-for-photographers/">TRIPS.</a> It&#8217;s also just really annoying.</p>
<p>Recently, I&#8217;ve been using my mom&#8217;s super powerful laptop to blog and I&#8217;ve been enjoying the speed with which I can upload photos. However, it&#8217;s not practical for me to hog her computer all day and when I go out of town, I need something to speed my ancient laptop along.</p>
<p>Enter, the <strong>SD Card Reader.</strong></p>

<p>My mom&#8217;s laptop (and most newer laptops) has a card reader on the side where I can insert my memory card directly. My laptop, however, doesn&#8217;t have one and therefore I have to use a cord.</p>
<p>With the cord, I have to download the photos before I can drag them into my blog posts. With the SD card reader, I DON&#8217;T have to download the photos. Instead, I can drag them into my blog posts directly.</p>
<p>This allows me to sort through the 80,000 photos I take on a daily basis without taking up a lot of my precious and limited computer memory.</p>

<p>OH! Also, with this gadget, I can drag my photos onto a blank CD and burn them there so I can back up my photos without having to take up computer memory space.</p>

<p>I think I was <strong>a witch</strong> for about 7 years in a row. In fact, I can&#8217;t remember <em>not</em> dressing up as a witch. Boo (as in thumbs down not the scary <em>boo!</em>). My mom always said costumes were too expensive for just one occasion and I could never convince her to <em>make</em> me a costume.</p>
<p>I did, however, get her to paint my nails <strong>BLACK!</strong></p>

I even cut off my workout a little early today because <strong>I just couldn&#8217;t wait to create</strong>. <p>Today, I recreated the <a href="http://www.livelaugheat.com/2010/03/07/im-the-dairy-queen/">2 min. Microwave Pumpkin Pie</a> I&#8217;ve been making for years. I topped it with some pecans and a delicious &#8216;icing&#8217; made with Greek yogurt and hazelnut cream cheese.</p>

<p>I ate this <em>several</em> times a week when I <a href="http://www.livelaugheat.com/photos/london-study-abroad/">studied abroad in London</a>. Perhaps it stemmed from my disappointment about not being able to celebrate my <strong>favorite holiday</strong> that year (Thanksgiving). Not only did I miss out on green bean casserole and cranberry sauce, I worked from 5 AM to 9 PM that day!!</p>
<p>Although, celebrating Thanksgiving in the UK would be a little awkward, no?</p>
<p>I first came across this quick snack/dessert on <a href="http://www.katheats.com/?page_id=291">Kath</a>&#8217;s blog, almost 3 years ago. <strong>Did you catch that?</strong> 3 years ago! I have been following KERF for what feels like a lifetime&#8230;.well about 1/7th of my life to be exact <img src='http://www.livelaugheat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

<p><strong><span style="font-size: large;"><span style="font-size: 18px;"><span style="color: #ee5521;">2 min. Microwave Pumpkin Pie</span></span></span></strong></p>
<p><strong>Mix together:</strong></p>
<ul>
<li>1/2 pumpkin puree</li>
<li>1/4 cup egg whites (from an egg or carton)</li>
<li>sweetener</li>
<li>cinnamon or pumpkin pie spice</li>
</ul>

<p>Microwave for 2 min. and voila! you&#8217;ve got pumpkin pie.</p>
<p><strong>Note:</strong> If you add more pumpkin, it&#8217;s more like <strong>flan</strong>. If you add more egg whites, it&#8217;s more like <strong>cake</strong>. The recipe is pretty flexible.</p>

<li>3/4 cup canned pumpkin</li>
<li>1/2 cup veggie stock</li>
<li>1/2 cup almond milk</li>
<li>Salt and Pepper</li>
</ul>
<p>Stir together and microwave for, you guessed it&#8230;2 minutes!</p>

<p>I ran 8 miles today&#8212;crazy! I&#8217;ve only run 8 miles <em>once </em>before and that was exactly 3 years ago. It was the last run before my <strong>stress fracture</strong> creeped in. That run happened after a month of running without a day of rest. As I describe in <a href="http://www.livelaugheat.com/meet-allie/my-story/">my story</a>, I went from running 0 mi/wk to 40 mi/wk in 4 weeks and then found myself sidelined for several months thereafter.</p>
<p>Major yikes.</p>
<p>I&#8217;d like to think I&#8217;ve come a loooooong way since then.</p>

<p>Today, I ran <strong>~8.2 miles</strong> in <strong>82 minutes</strong> (it took about 0.2 mi. for <a href="http://www.livelaugheat.com/workout-gear/">my Garmin</a> to pick up the satellites!).</p>
<p>This run was actually supposed to happen yesterday but I never made it outside. I even procrastinated some more this morning by putting together a shelf in my room&#8230;ha!</p>
<p>The &#8216;long&#8217; run came out of nowhere, really. I didn&#8217;t expect to run more than 4 miles or so. I was huffing and puffing at the 1 mile mark (!!) but somehow I just kept chugging along. I definitely had more to give at the end but my hips were starting to hurt so I called it a day. Better safe than sorry.</p>

<p>All made possible thanks to <strong>copious amounts of granola, chips, cereal and cookies</strong>. I went a little crazy with the carbs yesterday.</p>
<p>Probably not the greatest fuel choices but it did fill up my glycogen stores, I suppose.</p>

<p>I made sure to throw in some dates with my leftover portion today. There ain&#8217;t nothin&#8217; better than dates, goat cheese and pecans, y&#8217;all!</p>

			<content:encoded><![CDATA[<p></p><p>After 4 straight days of clouds and rain, I woke up to a beautiful sunny day. It felt a little like coming out of Noah&#8217;s Ark&#8230;as if I would know.</p>
<p>For some odd reason, it didn&#8217;t cross my mind to go for a run until I was already at the gym. Thus, I ate a bigger [very random] <strong>pre-workout snack:</strong> 1 <a href="http://www.livelaugheat.com/2010/09/30/snacking-not-slacking/">hermit</a>, 1 TBSP almond butter, a couple chips, and a bite of Peter&#8217;s pumpkin pie.</p>
<p>After <strong>20 min. on the elliptical</strong>, I got a strong urge to run. I hopped on the treadmill and <strong>ran 1 mile</strong>. I didn&#8217;t have my shin sleeves with me so I went back on the <strong>elliptical for another 10 min</strong>. The running urge kept on calling so I got back on the <strong>treadmill for another 2.5 miles</strong> and then rounded out my workout with <strong>10 min. upper body strength training.</strong></p>
<p>The whole time, I was staring outside the window at this beautiful scene!!</p>

<p>I was kicking myself for not running outside. I had an endless amount of energy and I could&#8217;ve totally rocked those <a href="http://www.livelaugheat.com/2010/09/29/shiny-and-new/">Sound of Music hills.</a></p>
<p>Now that I am getting back into running again, I feel like I should run whenever the weather is nice and my legs are feeling okay. As if I&#8217;m missing out if I don&#8217;t.</p>
<p>Then I remind myself that I&#8217;ve been down this road many many times in the past. The road that leads to injury. It&#8217;s simple. If I get injured, there will be <strong>no. more. running.</strong> Just because the weather is beautiful, it doesn&#8217;t necessarily mean I can/should run. Sure, it&#8217;d be wonderful, but I have to remember that there will be NO more wonderful runs if I go too far.</p>

<p>I came back and wolfed down a slice of brown rice bread with Greek yogurt and banana slices. I didn&#8217;t even have 3 seconds to snap a photo. I was one hungry hippo!</p>

<p>I finally cracked open my can o&#8217; pumpkin after finishing the frostbitten pumpkin. <strong>Note:</strong> I spoke too soon.The <a href="http://www.livelaugheat.com/2010/09/28/pumpkin-crepes/">frostbitten pumpkin</a> was NOT as good as new. I didn&#8217;t realize how off it tasted until I had a spoonful of this velvety goodness.</p>

<li>LOTSA cinnamon (it brings out the pumpkin flavor!!)</li>

<p>To round out my post workout &#8216;meal&#8217;, I had another <a href="http://www.livelaugheat.com/2010/09/30/snacking-not-slacking/">hermit</a> (so good!), a couple spoonfuls of almond butter, and some <strong>Riceworks Brown Rice Crisps</strong> that my dad picked up from Costco. We&#8217;ve been eating these for years now. They&#8217;re vegan and gluten-free.</p>
<p>And they are amazeballs.</p>

			<content:encoded><![CDATA[<p></p><p>The morning after <a href="http://www.livelaugheat.com/2010/09/24/peters-night-off/">an indulgent night</a> is never a pleasant one for me. Yesterday morning, I woke up feeling sluggish, parched and <em>still</em> full. I knew a sweaty workout was just what I needed to wake myself up and get my rear in gear!</p>
<p>To my amazement, I had a great workout and I went from feeling like 2 bucks to a million bucks. I originally wanted to go for a run outside but because it was 95 degrees outside I opted to run on the treadmill.</p>
<ul>
<li>4 mile run <--felt like 10!</li>
<li>1 mile walk</li>
<li>20 min. elliptical</li>
<li>10 min. upper body strength training</li>
</ul>
<p>Whew!</p>
<p>I forgot how much I dislike the treadmill. I have no idea how I ran on that thing everyday in the past. The entire time, I kept trying to visualize where I would&#8217;ve been running in my neighborhood had I gone outside.</p>
<p>It was a total <strong>snooze-fest</strong>. I think I&#8217;m gonna call it the snooze-mill from now on!</p>

<p>Then my mom brought back some leftover food from a meeting she had and I got snacky.</p>

<p>At some point I made <strong>a small salad</strong> to get in some veggies and then ate a huge <strong>oatmeal raisin cookie</strong> that my mom also brought back.</p>

<p>If you have no idea what I&#8217;m talking about&#8230;almond milk is a dairy-free beverage made from almonds that tastes similar to cow&#8217;s milk. It is similar to soy milk but tastes much better, in my opinion.</p>

<p>Last night, I made a lovely Mediterranean-inspired salad with the <strong>fairy tale eggplant</strong> from <a href="http://www.livelaugheat.com/2010/09/11/ive-been-missing-out/">the farmer&#8217;s market</a> (Peter was MIA).</p>

<p>I cut off the stems and boiled them for about 10 min. in a pot of water.</p>

<p>I added sun-dried tomatoes, feta cheese and avocado. The dressing was a balsamic vinaigrette. All the flavors worked oh so so beautifully together.</p>

<p>I found a jar of <strong>sun-dried tomatoes</strong> soaked in olive oil, garlic, and herbs. It <em>made</em> the salad!</p>

<p>Breakfast options were limited this morning. We were low on food (<a href="http://www.livelaugheat.com/2010/09/14/ze-munchies/">I wonder why</a>). No nut butter, no yogurt, no cereal, no nuts, no bananas, no English muffins&#8230;..</p>
<p>Enter a lone pear that I dug, literally, out of the fridge.</p>

<p>I cooked some pear chunks into the <a href="http://www.livelaugheat.com/2010/08/22/no-bake-baked-oatmeal/">No-Bake Baked Oatmeal</a> batter&#8230;.and reserved the rest of the pear for the topping.</p>

<p>I used 1/2 <strong>oat flour</strong> again this time and it is <span style="text-decoration: underline;">definitely</span> the trick to getting soft oats inside&#8230;.</p>
