			<content:encoded><![CDATA[<p></p><p>A few months ago, I came across a recipe in Self Magazine for protein scones. I immediately added it to my must-bake list, a list that could easily stretch from here to the moon&#8230;and back. I finally got a chance yesterday to give them a shot. Due to my untamable sweet tooth and overall love for carbs, protein sometimes gets overshadowed by bread, pastries, and baked goods in my daily diet.</p>
<p>Well? Why not make sweet carby goodness high in protein at the same time?</p>
<p>I adapted the recipe by switching out the Splenda for honey and subbing <em>some</em> of the almond flour for oat flour. I also used dried cranberries and chopped pecans as my mix-ins. You could potentially use whatever mix-ins you want&#8211;chocolate chips, raisins, walnuts&#8230;the possibilities are endless.</p>

<p>What makes these scones high in protein is the use of <strong>almond meal</strong> (just ground almonds), <strong>egg whites</strong>, and <strong>protein powder</strong>. The oats, oat flour, and pecans add some protein as well. With a quick calculation, found that each small scone has <strong>~10g of protein</strong>. A regular sized scone would have <strong>~15-18g of protein</strong>!</p>
<p>The combination of whole grain carbs and protein make this a great post-workout snack or a quick on-the-go breakfast item.</p>

<p>I used almond meal from TJ&#8217;s but you could easily make this in a food processor too. Also, If you use gluten-free oats, these scones would be gluten-free!</p>

<p>The recipe is simple and quick. Just mix together the dry ingredients.</p>

<p>Stir in the egg whites and honey.</p>
<p>Then stir in your desired mix-ins.</p>

<p>Be careful not to overmix.</p>

<p>Transfer the dough onto a greased cookie sheet (or foil covered upside down pan).</p>

<p>Form into a flat mound.</p>

<p>Cut into triangle scone shapes and separate them just a little bit.</p>

<p>Bake! I made these in <a href="http://www.livelaugheat.com/2010/10/07/toaster-oven-baking-and-rip-hard-drive/">the toaster oven</a> (as usual) and they came out great.</p>

<p>These are <em>not</em> your typical rich, buttery scones. They are what my mom likes to describe as &#8216;healthy tasting&#8217;. They&#8217;re really more like dense cakey muffin-like cookies. I suppose that would make them scuffinookies!</p>
<p><strong><span style="color: #b71a46;"><span style="font-size: large;"><span style="font-size: 18px;">Cranberry Pecan Protein Scones (Scuffinookies)</span></span></span></strong></p>
<p>Adapted from <a href="http://www.self.com/">Self Magazine</a></p>
<p><strong>Ingredients</strong></p>
<ul>
<li>3/4 cup almond flour (ground almonds)</li>
<li>1/2 cup oat flour (ground oats)</li>
<li>1/4 cup rolled oats</li>
<li>1/3 cup whey protein powder</li>
<li>1 tsp. cinnamon</li>
<li>1/4 cup honey</li>
<li>1/2 cup egg whites</li>
<li>1/4 cup pecans, chopped</li>
<li>1/4 cup dried cranberries</li>
</ul>
<p><strong>Directions</strong></p>
<p>Preheat oven to 350*F. In a large bowl, combine dry ingredients (almond flour, oat flour, rolled oats, protein powder, cinnamon). In a separate bowl, whisk honey and egg whites. Stir wet ingredients into dry ingredients until fully incorporated. Be careful not to overmix. Stir in dried cranberries and chopped pecans (or desired mix-ins) until evenly distributed.</p>
<p>Transfer the dough to a greased cookie sheet and form a flat mound. Cut mound into triangle scone shapes. Leave a space between scones (~1 cm). Bake at 350*F for 12-15 min.</p>
<p>*Makes 5 small scones or 3 medium scones. Recipe can be doubled or tripled.</p>

<p>After the Healthy Living Summit, I <a href="http://www.livelaugheat.com/2010/08/17/chicago-is-for-explorers/">took a train to the &#8216;burbs</a> of Chicago to stay with my dear blogger friend <a href="http://www.giantscoopsofjoy.wordpress.com">Lauren</a> and her husband Joe.</p>

<p>Several months ago, Lauren casually suggested that I visit her <em>some</em>day. I kept the idea in the back of my head but because I rarely travel to the midwest, I didn&#8217;t really give it much consideration at the time. Well, the moment I found out the summit was going to take place in Chicago, I immediately contacted Lauren about meeting up!</p>
<p>The idea of staying at a blogger friend&#8217;s house is a bit <em>out there</em> if you really think about it. Meeting up for lunch is one thing but staying overnight (when you&#8217;ve never ever met before) is a whole &#8216;nother story.</p>
<p><span style="font-size: medium;"><span style="font-size: 14px;"><strong><span style="color: #ef0062;">Conversations</span></strong></span></span> with my friends before I left home sounded something like this:</p>
<p><strong>Friend:</strong> <em>What are you doing in Chicago?</em></p>
<p><strong>Me:</strong> <em>Going to a conference and then visiting a friend for a couple days</em></p>
<p><strong>Friend:</strong> <em>Cool! A friend from school?</em></p>
<p><strong>Me:</strong> <em>Um no, not exactly. I haven&#8217;t actually met her yet. We&#8217;re just online friends.</em></p>
<p><strong>Friend:</strong> <em>Oh. Uhhh&#8230;well, hmm be careful!</em></p>

<p>However, Lauren always left me the most thoughtful comments on my posts and although we had never met in real life, it seemed as if we had been friends for years. Also, I knew this girl&#8217;s heart was made of gold <a href="http://www.livelaugheat.com/2010/02/02/lovehurt-relationship/">when she sent me a gigantic jar of Naturally More</a> Almond Butter back in February <img src='http://www.livelaugheat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>
<p>Lauren and Joe treated me like a <span style="font-size: medium;"><span style="font-size: 14px;"><span style="color: #ef0062;"><strong>princess</strong></span></span></span><span style="color: #ef0062;"><span style="font-size: medium;"><span style="font-size: 14px;"><strong>!</strong></span></span></span> Despite the fact that I was only staying for 2 short days, Lauren stocked up on all my favorite foods in preparation for my arrival. I opened the fridge to find kefir, TJ&#8217;s Carrot Ginger Muffins, shrimp, mini sweet peppers, berries, dates and almond butter!</p>

<p>I accidentally applied for a job two days ago. I say <em>accidentally</em> because I wasn&#8217;t ready to submit my application when I did. I thought I was just logging into the system but in actuality I was logging into the system AND submitting my application at the same time. In true Allie form, I was going to delay submitting the application a couple days to look over my resume and perhaps get my brother to look it over. The next thing I knew, it was officially submitted. Oopsies.</p>
<p>Believe it or not, I&#8217;m glad it <em>accidentally</em> happened because who knows if I would have submitted it in the end. You know me.</p>
<p>This job is a looooooong shot. I don&#8217;t expect to hear anything back from them but it would be pretty cool if I did. And by &#8216;pretty cool&#8217; I mean &#8216;holy cow amazing.&#8217; If I don&#8217;t get the position, I&#8217;m seriously considering working on an organic farm in Hawaii for a few months (manual labor in exchange for room and board). It&#8217;s one of those now or never things that I&#8217;ve thought about doing for awhile now. I mean, why not?</p>
<p>So that&#8217;s the life status so far. When I <a href="http://www.livelaugheat.com/2010/05/17/graduation-weekend/">graduated a month ago</a>, a lot of you asked what I was going to do next. At that point, I was still recovering from school. However, after a month of watching Red Box movies and reading intellectually stimulating books (uh huh), I&#8217;m starting to warm up to the idea of something new.</p>

<p>I had about 2 TBSP on my piece of toast. Actually, I had 1 TBSP on the toast and then forked another TBSP directly from the jar.</p>

<p>Instead of my usual Greek yogurt, I used TJ&#8217;s European Style yogurt (thinner than Greek). I added chia seeds, nuked pear chunks, Kashi Puffs, and dried cranberries.</p>

<p>While watching some quality Bobby Flay on the Food Network, I toasted pecans and proceeded to pop a whole bunch in my mouth.</p>

<p>The rest of the afternoon was spent making 5 batches of AllieBars. Whew!! I was so exhausted by the end. I also have a pre-blister on my pinky from all the stirring!!</p>

<p>I had plans to make my own dinner but because I spoiled my appetite by eating AllieBars, I decided to stick with some soup that my dad had on the stove.</p>

<p>It was chock full of veggies, a little bit of beef, and some tofu sticks.</p>
<p>Last time <a href="http://www.livelaugheat.com/2010/06/02/workout-rut/">he cooked with these &#8216;tofu sticks,</a>&#8216; he used the rest of the package so I couldn&#8217;t show them to you dry. Well, we got another package at an international grocery store, except this time it was called &#8216;bean thread.&#8217; They come super dry and crispy. My dad soaked them in water for about 30 min. and then dumped them in the pot.</p>

<p>What a year for Duke. Wow.</p>
<p>It was a super close game that went into overtime. Quite a fairy tale ending considering all that happened just over 4 years ago. It sure is a great year to be a Dukie.</p>

<p>My day started with a slice of <a href="http://www.livelaugheat.com/2010/05/28/dorking-it-up/">Brown Rice Bread</a> with cottage cheese, <strong><span style="color: #0800f2;">blueberries</span></strong> and <strong><span style="color: #ee0017;">dried cranberries</span></strong>. I wasn&#8217;t going to add the cranberries but seeing as how it&#8217;s <strong>Memorial Day</strong> today, I needed something to complete the red, white, &#8216;n&#8217; blue color scheme.</p>

<p>Then I went for a walk with my Momma. We shared a tart frozen yogurt under the blistering hot sun. I had to take these photos lightning fast before it started to melt on us!</p>

<p>We walked to Harris Teeter to return + rent another DVD. This time we picked up the movie <strong>Love Happens</strong> with Jennifer Aniston. I like her&#8211;especially given my newfound love for <a href="http://www.livelaugheat.com/2010/04/27/five-fat-friends/">Friends</a>.</p>
<p>Then we hopped over to Trader Joe&#8217;s to pick up a few things. I&#8217;d say all in all we walked about 2 miles.</p>

<p>Afterwards I snacked on some multi-grain crackers, dried mango and gulped down a homemade lemonade.</p>

<p>I went down to the gym to <strong>elliptical for 30 min.</strong> while reading <em>Dear John.</em> The fact that I can read a novel while ellipticalling shows how much I like this book. I even started sobbing while working out because something sad happened. Good thing no one saw me (I hope!).</p>

<p>Happy Memorial Day. Thank you to all the men and women who have served our country. A special tribute to <strong>Sgt. James John Regan</strong>, a past member of the Duke Lacrosse team who was killed in action in Iraq in 2007. He had a scholarship to go to law school and a job offer lined up with UBS but turned them both down because he felt he had a higher calling. Thus, he joined the United States Army and served four tours of duty in Afghanistan and Iraq.  He was engaged to be married at the time. RIP, JR.</p>

Pages were aflippin.&#8217; Tears were aflowin.&#8217; Tissues were asoakin.&#8217; I typically avoid crying late at night because it makes for puffy eyes but I just couldn&#8217;t peel myself away. Now I wanna see the movie!</p>
<p>I pulled quite a disappearing act yesterday&#8230;.oops. Now that I have plenty of time to blog, I&#8217;m not nearly as disciplined about posting on a set schedule. Go figure. These days, I have no idea what the date is or which day of the week it is. I don&#8217;t even know where my planner is anymore. That says a lot coming from someone who planned her days well in advance, down to the very last second. I&#8217;m sleeping later, waking up later, and my meal times are all over the place. It sure feels like sum sum summertime!</p>

<p>Here are the highlights from the last two days.</p>
<p>I went with my dad to the grocery store and found <strong><span style="color: #00761c;">kale</span></strong> for 79 cents/lb. This bushel was 81 cents!! Can you believe it?</p>

<p>I cooked 3/4 of the bushel in a pot with 1 in. of water, stirring for about 7 minutes. It wilted down quite a bit, though not as much as spinach.</p>

<p>I made a dressing of sorts to toss with the steamed kale:</p>
<ul>
<li>1 tbsp oil (1/2 EVOO 1/2 sesame oil)</li>
<li>1 tbsp balsamic vinegar</li>
<li>1 tbsp spicy mustard (the kind with the seeds)</li>
<li>1 tsp agave nectar</li>
<li>a sprinkle of salt</li>
</ul>

			<content:encoded><![CDATA[<p></p><p>After going a wee bit <a href="http://www.livelaugheat.com/2010/05/09/another-new-lettuce-leaf/">overboard for a week and a half</a>, I finally put my foot down yesterday and made an effort to listen to my hunger cues. I did fairly well, although the foot sort of <em>came back up</em> at night and I got friendly with the desserts. <strong>Something is better than nothing though.</strong></p>
<p>I have to tell myself that because I am a long time member of the <em>all or nothing</em> club. If I&#8217;ve eaten a bowl of ice cream, then I think why not have a second? And a third? Dare I say a fourth? I don&#8217;t think that way about spending money though. If I buy a purse, I don&#8217;t think why not buy a second or a third? That would be silly. I can always buy another purse later and I can always eat another bowl of ice cream later.</p>
<p>So I&#8217;ve joined <strong>The Something Club.</strong> It&#8217;s possible to have <em>something</em>&#8211;not all and not nothing.</p>
<p><strong>Tell me: Which club are you in? How do you combat the all-or-nothing mentality?</strong></p>

<p>Can you believe I went out for a run yesterday in a long sleeve t-shirt?! Boy was it chilly and windy. I ran 1 mile and felt like I couldn&#8217;t go on. As I was walking back, totally defeated, I noticed the entrance to a <em>Sugarland Run Trail</em> that led into the forest. On a whim, I decided to take it and before I knew it, I had run 3 miles. Although I set out for 4 miles, I had to remind myself of my membership in The Something Club. Three miles was still something. <strong>It wasn&#8217;t</strong> <em><strong>all</strong></em> <strong>that I hoped to run but it was better than nothing.</strong></p>
<p>Afterwards, I hopped on the elliptical for 20 min. and squeezed in a quick 15 min. of leg weights.</p>

I tell you about my day as well as the stuff that goes into my belly from morning &#8217;til nighttime. Well this post is going to be slightly different in that it&#8217;s going to be a <span style="font-size: large;"><span style="font-size: 18px;"><span style="color: #60009b;">rando</span></span></span> mess of all that went on this weekend. Reason being, I wasn&#8217;t able to capture everything and everything wasn&#8217;t necessarily worth capturing either.</p>

<p>Yesterday, I <span style="font-size: 18px; color: #60009B;">ran to the dough</span> (visited <a href="http://www.livelaugheat.com/2010/02/22/on-cloud-9/">Sugarland</a> Bakery) to get some more juice for my final paper. When I got there, they were making chocolate covered strawberries. One of them was <strong>jumbo-gantic</strong> so Liz, the cake decorator and I got to split it.</p>

<p>Then I <span style="font-size: 18px; color: #60009B;">ran to <em>more</em> dough</span> at Great Harvest. I stopped by to see if they had anything of interest. I had a complimentary slice of the <strong>Cinnamon Chip Loaf.</strong></p>

<p>I almost got some coconut muffins but I ended up spotting <strong>Naturally Nutty Pepita Sun Butter</strong> and forgot all about them. What a <span style="font-size: 18px; color: #60009B;">rando</span> sighting!</p>

<p>I also stopped at WFs and TJ&#8217;s. I had a bajillion <span style="font-size: 18px; color: #60009B;">rando <span style="color: #000000; font-size: 12px;">samples while shopping&#8211;gouda cheese, feta cheese, grapefruit, vegan white bean soup, and energy bars.</span></span></p>

<p>I bought 2 of the energy bars, which were on sale for buy one get one free.</p>

<p>I ate the <strong>Caramel Chocolate</strong> one today. It reminded me of something, but I can&#8217;t quite put my finger on it. It tastes sort of like a Luna Bar (but that&#8217;s not what I&#8217;m trying to think of!).</p>
<p>One bar contains 40% of the recommended daily value of calcium&#8230;woohoo.</p>

			<content:encoded><![CDATA[<p></p><p>I&#8217;ve been making quite a dent in the snax that <a href="http://www.livelaugheat.com/2010/04/10/special-visitors/">my brother brought back from London</a>, most of which have gone <strong>under the radar.</strong> I haven&#8217;t been photographing them because they&#8217;ve been jumping into my mouth!! A cookie here or a couple chocolate hazelnuts there. You understand, right? Well, today I finally did some documenting, albeit a little late each time&#8230;you&#8217;ll see why&#8230;</p>
<p>For a pre-workout snack, I had <strong>1/2 of this 9 Bar&#8230;Pumpkin Bar</strong> (I ate the other 1/2 yesterday, under the radar).</p>

<p>I had about twice the size of this nugget  pre-workout (I ate a little too quickly for the camera to catch up with me <img src='http://www.livelaugheat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> ).</p>

<p>This bar was seedy, nutty, and crunchy&#8230;yet chewy overall. It was chewy like a Larabar but the seeds made it quite crunchy at the same time. So good. I hope my brother brings home more of these next time (wink wink).</p>

<p>I&#8217;ve been munching on these all week at random times throughout the day, including this morning! These are unbelievably good. Anything covered in yogurt/chocolate is amazing but the addition of hazelnuts takes it to <strong>a whole new level.</strong></p>
<p>I think hazelnuts are becoming my new favorite nut!</p>

<p><strong>Workout:</strong> <strong>60 min. on the <a href="http://www.livelaugheat.com/2010/04/12/the-carb-train/">Octane Fitness</a> </strong>machine (running elliptical). The moving handlebars on that machine annoy me because they get in the way of my reading material. I can&#8217;t believe I&#8217;m saying this, but I actually <em>miss</em> the elliptical (gasp!). The mini gym only has Octanes and Treadmills, however, and going there vs. the main gym saves me 30-40 min.</p>
<p><strong>Post workout:</strong></p>
<p>Millet bread with Greek yogurt, Galaxy Granola, and Dried Cranberries.</p>

It&#8217;s remarkable how simply NOT being in the same room as a snack can reduce mindless eating. It helped that I had AllieBars to munch on instead <img src='http://www.livelaugheat.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' /> .</p>

Just from eyeballing it, I think there was <strong>~25g of protein</strong> in this bowl. <span style="font-size: medium;"><span style="font-size: 14px;"><strong><span style="color: #008100;">Cha ching!</span></strong></span></span></p>
<p>This may not look super appealing but it was crazy good. It was sort of like a <span style="color: #fd3a00;"><span style="font-size: large;"><span style="font-size: 18px;">deconstructed omelet,</span></span></span> if you will.</p>
